healthy homemade ice cream
Indy loves ice cream, which is great because its a pretty ideal dessert for kids (and adults too), as long as its not full of a long list of ingredients that you can't pronounce; its full of healthy fats (which slow sugar absorption) which are full of fat-soluble vitamins A, D and K, as well as enzymes and probiotics (if you use raw milk). Plus. . . yum.
Healthy Homemade Ice Cream (adapted from Nourishing Traditions) - makes 2 quarts
6 pastured egg yolks
1 cup grade B maple syrup
2 tablespoons vanilla extract (I love Rose & Ivy brand, it is certified non-GMO, and has no additives: just vanilla extratives in alcohol, and water)
2 tablespoons arrowroot powder
4 cups whole raw milk
2 cups raw cream (If you don't have access to raw milk and cream, use the best you can find - grassfed, non-homogenized, and never ultra-pasteurized, and use 3 cups whole milk and 3 cups cream instead )
Beat egg yolk, then add remaining ingredients and blend until well-combined. Pour into ice cream maker and follow manufacturer's instructions.
